Pairing Ideas: Exceptional quality 'cava' can go with everything. Pale pink, subdued, and elegant clean, pure, and almost crystalline aromas of red fruits, raspberry, dried cherries, herbal floral notes, and spices. The clean nose evolves with a smooth, voluminous, fruity texture, pleasant freshness, and fine bubbles. Driven by an outstanding balance, with low dosage. Great as an aperitif, cured meats and cheeses, seafood and game birds.
Unique History: 1312 is the year the family started making Cava. They are on their 30th generation of wine-making. Mestres only uses the traditional grapes of their terroir. All of them are hand-harvested on their own 74 acres of vineyards, 690 feet above sea level, some of the oldest vineyards in the area.
No insecticides, or herbicides, are used at the vineyard to protect their land, and pruning is carried out to reduce their vigor. Therefore, grapes are produced of greater ripeness and intensity. Today, they still use traditional methods taught by their ancestors, including long aging in caves and the youngest of their wines, aged 30 months. All of the wines in their cellar are Reserva or Gran Reserva.
