About The Vineyard: The 8 acres of grapevines found at SunHawk Farms were planted twenty years ago by John Schaeffer, a pioneer of natural products and solar energy, who bought the 300-acre property and built an ideal retreat up the mountain next to Duncan Springs Peak. John’s Demeter-certified vineyard includes a 17th-century inspired lavender labyrinth at the top of the vineyard, a 2,500 tree olive orchard and 4 blocks of mixed (predominantly Rhône) red and white grape varieties planted on volcanic and serpentine soils. John and foreman Manuel Nunez are committed to developing and maintaining a biodynamic and self-sustaining ecosystem. Vines are treated with herbs, minerals and manure, much of which is sourced from the property itself. AVA: Mendocino
Method: The fruit underwent carbonic maceration for two weeks and was then foot crushed.
